Three Cheese Angel Hair Pasta and Broccoli

1 pkg angel hair pasta
2 big cloves crushed garlic
a little bit of finely chopped onion
2 T olive oil
1 pkg frozen broccoli florets
1/2 c cream or half and half
1 container shredded italian cheese mix (I like Romano, Parm, etc.)*across from the deli at Fry's*
1/4 lb shredded swiss cheese
salt and pepper

Start a pot of boiling water for the pasta.

Heat oil in skillet and brown the garlic and onion together until goldenish. Add the broccoli and sautée until it is tender.
Add the cream and salt and pepper.

Cook the pasta according to pkg directions. Drain and toss with all the cheeses (quickly while the pasta is still very hot)

Pour the broccoli and cream mix into the pasta. Toss and Serve.

To make the meal a little heartier add a grilled chicken breast.


If your too open minded your brains will fall out.

Just an FYI. I recently discovered that google has a recipe search feature. Its pretty cool.

You can search by primary iungredients, types of food etc..

crock pot chicken

10-12 frozen chicken breast tenderloins (from costco)
1 can cream of chicken (can use cambell's cheddar cheese cause or cream of mushroom)
1 packet dry italian salad dressing (add just dry seasoning)
1 stick of butter (i have used just 1/2 stick and tastes the same)

cook on low for 4/5hrs or high for 2 hrs.
shred meat into sauce to absorb the yummy sauce and serve.

Sooooo easy and SOOOOO yummy!

Get in your car, drive to Chandler and get off the 101 at Chandler Blvd. Take a right, go just past Walgreens to Cyclo Vietnamese Fusion Restaurant. Sit down, order the Asian BBQ Ribs and the Green Papaya Salad with Shrimp, Mint, Basil and Cilantro. Enjoy.

Tequila Chicken

4 Bnls Chicken Breasts
1/3 cup tequila
1/3 cup lime juice
1/3 cup olive oil
2 tbs dehydated cilantro
1+ tbs chopped garlic
salt/pepper to taste

Marinate the chicken all day. Grill on the BBQ. Serve with your choice of salad. (We're having fideo tonight)

Oh I've got a good steak recipe, get into car drive to Ramsey's and get their T-bone. It is yummy and someone else cooks it and there is no clean up (at least for me) LOL

mom2boys, great recipe! I make a crockpot chicken that is similiar - I use the cream of mushroom and the only thing I add is cream cheese. It is really good!

Saute shrimp in pan with cooking sherry, butter, fresh garlic and oregeno. Cook noodles (your preference, we prefer linguinie, but have tried spagetti and angel hair). Add cooked pasta to shrimp and sauce, let simmer, stirring every minute or so for about 10 minutes, then serve. What I like best is that it reheats and tastes great.

I have not shared this recipe with anyone. I go to this restaurant in Cleveland called "Three Birds". They have the best menu and food. I talked the chef out of this recipe. It is great on seafood, chicken or just as a dip. Once you have it once, I guarantee you will make it again.

Smoked Tomato BBQ sauce

32oz Orange Juice
7 oz Chili Paste
8 oz Sweet Soy/ Kecap Manis (Lee-Lee’s market in Chandler)
8 oz Burbon
2 oz Red Wine Vinegar
4 Tblsp roast garlic
24 Roma Tomatos smoked. (Cut in half and put on grill with wood chips)
2 red onions, carmelized
2 Tblsp sugar

Carmelize onion w/sugar
Deglaze w/burbon
Combine all ingredients
Cook 1 hr
Blend and add lots of butter as desired. Should be a thick consistency somewhat like maple syrup.

How about one for dessert? These are my favorite. Whenever someone asks me to bring a dessert for something, this is what I make.

Chocolate Scotcheroos

6 cups Rice Krispies Cereal
1 cup light corn syrup
1 cup sugar
1 cup peanut butter
1 cup milk chocolate, chocolate chips
1 cup butterscotch chips

1. Place corn syrup and sugar into large saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add Rice Krispies cereal. Stir until well coated. Press mixture into a 13 x 9 x 2-inch pan coated with cooking spray. Set aside.
2. Melt chocolate and butterscotch chips together in small saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into bars when cool.

Here is one that is super easy and my husband LOVES it.

Salsa Pork Chops

Pork Chops (I have used boneless chicken breasts and they work good too!)
1 large jar of salsa (I use pace because it is runny and chunky and that’s good for this recipe)
1 small can diced green chilies (don’t drain them use the juice too!)
1 package cream cheese
1 handful shredded cheese
1 small can jalapeños (optional)

Salt, pepper and garlic porkchops and lightly brown in a large sauté pan with a small amount of olive oil.

Mix salsa, green chilies together and then pour on top of pork chops, cover, lower the heat to simmer and cook aprox 20-30 minutes depending on how thick the cut is.

Mix softened cream cheese, shredded cheese and jalapeños in a small bowl. When meat is done cooking add a spoonful of cheese mixture to the top of the pork chops and let set covered for 5 minutes (I do this with the heat off so the cheese mix dose not run but gets warm).

I serve this with white rice.

*I don’t usually cook with exact measurements I like to just throw things in. This recipe will do 4 pork chops 1” thick. If you want to do more simply add more salsa and make more cheese mix.

*If you want this to cook even faster you can buy the thin sliced pork chops (I find those a lot on the discount end of the meat cooler at Fry’s) and they will cook up in less then 10 minutes and use minute rice instead of long grain!
