i got a ton of carrots and cucumbers in my bountiful basket this weekend. i need some ideas. I've added both to garden salad and some pasta salad. looking for others. Thanks in advance!

Cucumber, dill, mint, yogurt, red wine vinegar, salt and pepper. Makes a wonderfull cold summer salad. If you don't have mint, PM me. Ill send you my address. Come to my front yard and cut off what you need.

I made a cucumber salsa with my stuff from the basket. One tomato diced, 1 cucmber seeded and diced, 1/2 red onion diced, and the juice of one lime, and some minced cilantro. I added a bunch of diced green onions and some jarred jalepenos, 1/2 tsp dillweed and 1/2 tsp salt. (I only used a tsp of jalepenos, you could use more). Mix then cover and refrigerate for an hour or more. We ate it with tortilla chips but my hubby said we could easily have eaten it as a side salad dish.

I like this pasta salad. Cube Cucumbers, tomatoes and red onion. Cook speghetti noodles (cut in half), toss together with light italian salad dressing. you can add grated carrots, feta cheese, or anything else that you like.

cucumbers are awesome sliced in a bowl of vinegar, water salt and pepper...my parents used to add onions too...(im not a fan of them so I leave them out) Let it sit in the fridge for a couple hours to chill...YUM!

CARROT RAISIN SALAD

2 1/2 c. shredded carrots (about 3 lg.)
1 med. stalk celery, sliced thinly
1/2 c. raisins
1/2 c. mayonnaise or salad dressing
1 tsp. lemon juice

Mix all ingredients. Chill and serve.
